Layer one sheet on top of the other, and fold the edges together to create a double-layered base. Drizzle olive oil in the center of the foil, leaving ample space (4-5 inches) on each side for sealing. Arrange a generous portion of the vegetable mixture over the oiled area, then season liberally with curry powder, salt, and pepper. Spoon a generous amount of vegetable broth over the vegetables. Repeat with the remaining foil and vegetable mixture. (Prep time: 10 minutes)

Seal the Packets: Bring the two longer sides of each foil packet together above the vegetable mixture. Fold the edges over several times, creating a tight seal as you approach the center. Flatten the folded seam down securely. Next, roll up the open ends of the foil packet towards the center, creating sealed ends. This will create a secure, airtight environment for steaming the vegetables. (Prep time: 5 minutes)

Cook Over the Campfire: Carefully place the sealed foil packets near the edge of the prepared campfire, using long-handled tongs for safe handling. Cook the packets, turning occasionally, until the vegetable mixture is tender and easily pierced with a fork when you press on the outside of the packet. (Cook time: 20-30 minutes)

Cool and Serve: Remove the foil packets from the fire using tongs and let them cool slightly for about 5 minutes. To serve, carefully open the packets from the top, leaving the rolled-up sides intact to form a makeshift bowl. Be cautious of escaping steam. For a richer flavor, consider adding a knob of butter or a drizzle of coconut milk to each packet before sealing.
