Follow The Directions

01

Step
5 mins

Roast the Garlic: Preheat your oven to 250°F (120°C). Place the garlic cloves in a small baking dish and drizzle with 3 tablespoons of olive oil. Lay the thyme sprigs over the garlic. (Prep time: 5 minutes)

02

Step
1 hrs

Bake until the garlic is golden brown and easily mashed with a fork, about 1 hour. Remove from the oven and set aside. Reserve the garlic-infused oil for other culinary creations.

03

Step
5 mins

Caramelize the Onions: Heat a large skillet over medium heat. Add the butter and the remaining 3 tablespoons of olive oil. Add the sliced onions and stir to coat. (Prep time: 2 minutes)

04

Step
30 mins

Cook, stirring frequently, until the onions begin to soften and turn translucent, about 15 minutes. Add the water, balsamic vinegar, sugar, salt, and pepper.

05

Step
20 mins

Continue to cook, stirring regularly, until the onions are deeply golden brown, very soft, and reduced by at least half, about 15 minutes more. Reduce the heat to medium-low.

06

Step
5 mins

Cook the Pasta: While the onions caramelize, bring a large pot of lightly salted water to a boil. Add the gemelli pasta and cook according to package directions, until al dente, about 11 minutes.

07

Step

Finish the Sauce: Meanwhile, add the heavy cream, 4-5 cloves of the roasted garlic (mashed), 1 tablespoon of parsley, and 1/2 cup of Parmesan cheese to the skillet with the caramelized onions. Stir well to combine and create a creamy sauce. Reserve the remaining roasted garlic for another use.

08

Step

Assemble and Serve: Drain the pasta well and divide it among four serving plates. Spoon the caramelized onion and roasted garlic sauce generously over the pasta. Garnish with the remaining Parmesan cheese, parsley, and a sprinkle of fresh black pepper.

For a richer flavor, use brown butter instead of regular butter to caramelize the onions.
Add a pinch of red pepper flakes to the sauce for a touch of heat.
The reserved roasted garlic oil is excellent for drizzling over roasted vegetables or using as a base for salad dressings.
If you don't have fresh thyme, you can use 1/2 teaspoon of dried thyme.
To make ahead: The caramelized onions can be made up to 3 days in advance and stored in the refrigerator. Reheat before adding the cream and cheese.
