Sear the Chicken: Leave about 1 tablespoon of bacon grease in the skillet. Increase heat to medium-high. Season the chicken breasts generously with salt and pepper. Sear the chicken in the hot bacon grease until golden brown on one side (4-5 minutes). Flip and cook until the chicken is cooked through and an instant-read thermometer inserted into the thickest part registers 165°F (74°C) (another 4-5 minutes).

Melt the Cheese: Reduce heat to low. Sprinkle the grated Cheddar cheese evenly over the chicken breasts. Cover the skillet and allow the cheese to melt completely (1-2 minutes).

Assemble and Serve: Arrange the baby spinach on a serving plate. Carefully place the cheesy chicken breasts on top of the spinach. Dollop with sour cream, sprinkle with crumbled bacon and chives. Serve immediately.

For a richer flavor, try using smoked Gouda or Gruyere cheese instead of Cheddar.
If you don't have fresh chives, you can substitute with dried chives, but fresh is always best.
To add more vegetables, consider sauteing some mushrooms or bell peppers in the bacon grease before cooking the chicken.
